  • 3 lbs Yukon Gold or Russet potatoes, peeled and thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream (or Greek yogurt)
  • 1/2 cup unsalted butter, melted
  • 1 packet onion soup mix (about 1 oz)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare your potatoes by peeling and slicing them into thin rounds.
  2. In a bowl, mix sour cream, melted butter, onion soup mix, salt, and pepper until well combined.
  3. Layer potato slices in the crockpot and drizzle some of the sour cream mixture over each layer. Repeat until all ingredients are used.

  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
