- 1 lb ground beef or turkey
- 1 cup cauliflower rice
- 1 cup diced tomatoes (canned)
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tsp garlic powder
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, cook the ground beef or turkey until browned.
- Stir in the cauliflower rice, diced tomatoes, garlic powder, Italian seasoning, and half of the cheese. Mix until well combined.
- Stuff each pepper generously with the meat mixture.
- Place stuffed peppers in the baking dish and cover with foil. Bake for 25 minutes.
- Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 10 minutes until golden and bubbly.
