  • 4 large bell peppers (red, green, yellow, or orange)
  • 1 lb ground beef or turkey
  • 1 cup cauliflower rice
  • 1 cup diced tomatoes (canned)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the ground beef or turkey until browned.
  4. Stir in the cauliflower rice, diced tomatoes, garlic powder, Italian seasoning, and half of the cheese. Mix until well combined.
  5. Stuff each pepper generously with the meat mixture.
  6. Place stuffed peppers in the baking dish and cover with foil. Bake for 25 minutes.
  7. Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 10 minutes until golden and bubbly.
