- 2 cups heavy cream
- 1 cup pumpkin puree (canned or fresh)
- 3/4 cup granulated sugar
- 5 large egg yolks
- 1 tsp cinnamon

Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan over medium heat, combine heavy cream and vanilla extract until steaming.
- In a bowl, whisk egg yolks, sugar, cinnamon, nutmeg, and pumpkin puree until smooth. Gradually add the warm cream mixture while whisking continuously.
- Pour the custard into ramekins placed in a baking dish. Fill each ramekin three-quarters full.
- Create a water bath by pouring hot water into the baking dish until it reaches halfway up the sides of the ramekins.
- Bake for 30-35 minutes until set but slightly jiggly in the center. Cool and refrigerate for at least two hours.
- Before serving, sprinkle granulated sugar on top and caramelize using a kitchen torch or broiler.
