Description

Ingredients

  • 2 cups heavy cream
  • 1 cup pumpkin puree (canned or fresh)
  • 3/4 cup granulated sugar
  • 5 large egg yolks
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan over medium heat, combine heavy cream and vanilla extract until steaming.
  3. In a bowl, whisk egg yolks, sugar, cinnamon, nutmeg, and pumpkin puree until smooth. Gradually add the warm cream mixture while whisking continuously.
  4. Pour the custard into ramekins placed in a baking dish. Fill each ramekin three-quarters full.
  5. Create a water bath by pouring hot water into the baking dish until it reaches halfway up the sides of the ramekins.
  6. Bake for 30-35 minutes until set but slightly jiggly in the center. Cool and refrigerate for at least two hours.
  7. Before serving, sprinkle granulated sugar on top and caramelize using a kitchen torch or broiler.
