  • 2 lbs Yukon Gold potatoes
  • 4 cloves garlic
  • 1 cup unsweetened almond milk
  • 1/4 cup nutritional yeast
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Peel and chop the Yukon Gold potatoes into even chunks. Place in a large pot of cold water with a pinch of salt.
  2. Bring to a boil over medium-high heat. Once boiling, reduce to medium-low and simmer until fork-tender (15-20 minutes).
  3. While potatoes are boiling, roast the garlic until golden brown.
  4. Drain the potatoes and return them to the pot. Add olive oil, almond milk, roasted garlic, nutritional yeast, salt, and pepper. Mash until smooth.
  5. Taste and adjust seasoning as needed; add more almond milk for desired creaminess.
  6. Serve warm, drizzled with olive oil or topped with fresh herbs.
